Our next farm is Matheson Oyster Company based in Guinea in Gloucester County. Matheson is a female and family-owned business, one of the few of its kind in Virginia. They grow their “wavelength” oysters in the Mobjack Bay using adjustable longline systems in a salinity around 22-25 ppt. They’re on the saltier side but the sweetness of the Mobjack Bay shines through on the finish.
